Japanese-inspired nourish bowl

I don’t post many savoury recipes because I don’t really create many, to be honest. I generally use recipe books like Thug Kitchen, The New Vegan, The Accidental Vegetarian & Deliciously Ella, to name a few. I did manage to put this nourish bowl together myself, but it’s so easy to make it almost shouldn’t be called a recipe! The tofu needs to be prepared in advance. I use firm tofu, squeeze the liquid out of it and leave it with something heavy on top of it for a while to get as much liquid as possible out. I then slice it and marinate it in a miso paste mix (I get it in Evergreen Health Foods) for a few hours or even overnight. This gives it a great flavour & texture – I’m not a fan of watery tofu. The beauty of this ‘recipe’ is you can use pretty much any vegetables or toppings you have to hand.

Leafy greens (I normally use kale or spinach)

Half a courgette

Liquid aminos

Tofu (prepared as above)

Half an avocado, sliced

1 raw carrot, shredded or sliced

Green beans

50g Udon or Soba noodles

Thumb sized piece of ginger


Cook the noodles as per the instructions on the pack.

Steam or microwave the green beans.

Lightly fry the greens & shredded courgette in some liquid aminos. Place in the bottom of a serving bowl.

Chop the tofu into bite-sized pieces. Place everything in the bowl on top of the greens. Shake some liquid aminos on top to flavour.
