Nutty Coconut Granola

This simple granola recipe can be customised to suit whatever you have lying around. I don’t like my granola too sweet, and I like it very crunchy so I’ve used a little rice malt syrup as a sweetener & hemp seeds for extra crunch. You can use pretty much any liquid sweetener, e.g. agave, date syrup, honey, maple syrup etc., and any combination of nuts & seeds you like.



1 tablespoon coconut oil

1 tablespoon rice malt syrup

60g oats

20g hemp seeds

20g sunflower seeds

20g mixed nuts (I used brazil & cashew)

20g dessicated coconut


Preheat oven to 150°. Melt the coconut oil & rice malt syrup over a low heat.  Mix all the dry ingredients together & stir in to the liquid until coated. Spread on to a baking tray & bake for 30 minutes, turning halfway through. Serve with some coconut yogurt & cacao nibs, or seasonal fruit of your choice!
